Cream cheese fritters and maple summer cherries

Sweet meets savoury in these fabulous fritters that get a summer cherry finish. They are great for breakfast or brunch and you can swap the cherries for pears or pineapple.

Method

FRITTERS

Place cream cheese, cottage cheese, eggs, vanilla extract and sugar in a bowl. Beat until smooth.

Stir in raisins and lemon zest. Sieve our and combine.

Cover and refrigerate for 4 hours, or overnight.

Roll into balls with excess our, flatten into 5cm discs.

Place on baking tray with greaseproof paper. Melt butter and oil in frying pan and cook fritters for 2 minutes each side until golden brown.

Keep warm in low oven.

CHERRIES

Heat maple syrup, lemon juice, cherries and 1 tbsp of water in a pan until cherries become soft.

TO SERVE

Warm the fritters and add the cherries.

CHEF’S TIP

As an alternative to cherries, use strawberries or raspberries. All seasonal fruits can be used e.g. poached pears or pineapple.

  • 200g cream cheese
  • 250g cottage cheese, well drained
  • 2 large eggs
  • 1 tsp vanilla extract
  • 40g maple sugar
  • 40g chopped raisins
  • Lemon zest, grated
  • 125g plain flour (plus extra for dusting)
  • 4 tbsp unsalted butter
  • 2 tbsp vegetable oil
  • Cherries

  • 175ml pure maple syrup
  • 200g fresh cherries
  • 1 tbsp water
  • 1 lemon, squeezed for juice
