Maple energy squares

A great way to make your own energy bars.

A great snack for refuelling after a workout – or for popping in a lunchbox. The squares are packed with fruit, nuts and seeds and are super easy to prepare.

Method

Preheat the oven to 180ºC/160ºC fan.

Spray a 23cm square baking tray with cooking spray, or brush with vegetable oil.

In a food processor, combine the oatmeal, skimmed milk powder, sunflower seeds, our, maple syrup and eggs.

Process for 10 seconds until the mixture is smooth. Stir in the cranberries, apricots and almonds then pour into the prepared baking tray.

Sprinkle with coconut flakes.

Bake for 20-25 minutes or until the edges are golden and the centre is set.

CHEF’S TIP

These energy squares are a great snack for before or after exercising. Use any dried fruits of your choice in the energy square mix.

  • 125g skimmed milk powder
  • 125g sunflower seeds, roasted
  • 80g all-purpose flour
  • 170ml pure maple syrup
  • 2 large eggs
  • 125g dried cranberries
  • 125g dried apricots, chopped
  • 125g almonds, sliced
  • 125g coconut flakes
