Spiced maple pumpkin tart

The perfect vegetarian bake, our maple pumpkin tart recipe is a great way to use up any extra pumpkin.

Method

  1. Preheat oven to 190ºC.
  2. Beat the eggs with the pumpkin purée and maple syrup. Add spices and cream.
  3. Mix well to obtain a homogenous mixture. Pour the mixture into the crust shells.
  4. Bake in the centre of the over for 15 minutes or until the pumpkin mixture is firm.
  5. Serve hot or cold with a garnish of maple syrup whipped cream.

Pumpkin Purée

  1. Cut the pumpkin into quarters, peel and cut into chunks.
  2. Place in a large saucepan, cover with water and bring to the boil.
  3. Cook for 20 minutes or until pumpkin is tender.
  4. Drain well and allow to cool. Then puree the flesh in a food processor or mash by hand.

  • 12 unbaked, mini tart crust shells
  • 2 eggs
  • 450g pumpkin purée
  • 255g maple syrup
  • ¼ tsp ground ginger
  • ½ tsp ground cinnamon
  • 240ml cream
