Herby Green Vegetable Tart with Maple

Green tart with maple syrup
4-6 portions

Ingredients

  • 350g pack of pre-made short crust pastry
  • 200g purple spouting broccoli
  • 80g fresh or frozen peas
  • 75g sugar snap peas
  • 250g kale
  • 1 bunch of asparagus (thinly sliced)
  • 150g goat’s cheese (diced into 1cm cubes)
  • 3 eggs
  • 2 tbsp pure Canadian maple syrup (preferably amber syrup for its rich taste)
  • 200ml double cream
  • 200ml crème fraîche
  • Pinch of ground nutmeg
  • Salt and pepper, to taste

Method

  1. Pre-heat the oven at 190C
  2. Blanch all the greens in boiling water
  3. Line a baking tray with grease-proof paper and roll out the pastry
  4. Drain the greens and layer onto the pastry
  5. Whisk the eggs, maple syrup, double cream, crème fraîche and nutmeg together and pour the mixture over the greens
  6. Bake for 10 minutes
  7. Remove from the oven, crumble over the goats-cheese and season with salt and pepper
  8. Return to the oven and bake for a further 10-15 mins
  9. Leave to rest for 5 mins and serve warm or leave to cool and serve cold
