Piña Colada Maple Mocktail

Ingredients

  • 200ml coconut cream
  • 1 fresh pineapple, cut into chunks
  • 400ml pineapple juice
  • 6 tbsp pure maple syrup (preferably amber syrup for its rich taste)

Method

  1. Add the pineapple chunks, pineapple juice, maple syrup and coconut cream to a blender and blitz until smooth. This should take approximately 1 minute on high speed.
  2. Pour into a tall glass and serve immediately with a wedge of pineapple.
