Pan-fried maple salmon

Looking for a quick and easy meal that you can repeat throughout the busy winter months? Not only is this maple salmon dish healthy and delicious, but it also comes together in under 30 minutes!

The glaze for this recipe is made with a mix of garlic, ginger, soy sauce, sesame oil and maple syrup, striking a wonderful balance between sweet and savoury flavours.

Once the salmon fillets have been left to soak in the marinade, they’re added to a heavy-bottomed pan and fried for a few minutes, with the high heat giving them that classically crispy texture.

A squeeze of lime juice and a sprinkling of fresh coriander provide the finishing touches, complementing this wonderful weeknight meal with a subtly citrusy flavour.

Chicken and bean maple bake

Another richly flavoured dish that’s surprisingly simple to prepare, this chicken traybake is a one-pot wonder in every sense of the phrase.

To begin with, whole chicken thighs are left to marinate – ideally overnight – in a tantalising blend of olive oil, wholegrain mustard, Worcestershire sauce and pure maple syrup.

Once the flavours have been infused, the chicken is initially cooked on its own so that the skin becomes brown and crispy. Leaks, butter beans and chicken stock are then mixed in, reading for baking in the oven.

Just before serving, crème fraiche and spinach leaves are added, with grated parmesan finishing the dish. A true crowd-pleaser that embodies the essence of winter comfort!

Vegan aubergine and maple hot pot

Hearty, colourful and bursting with flavour, this aubergine dish serves as the ultimate vegan hot pot and is perfect for preparing over winter weekends.

The base of the sauce is made with garlic, ginger, chilli, mustard, tomato purée and maple syrup, giving it a complex flavour that’s both sweet and spicy.

Chunks of aubergine are added to the sauce and then covered with vegetable stock, ready for simmering for up to half an hour until the liquid has reduced.

When ready to serve, vegan yoghurt is used to thicken the sauce, while the garnish of fresh coriander and red chillis provides added colour and flavour.

One-pot maple roast chicken

Craving a traditional roast dinner but don’t want the hassle of having to wash up countless pots and pans? Look no further than this wonderful one-pot roast chicken!

Combining simplicity with sophistication, this recipe sees a whole chicken roasted to perfection alongside parsnips, Brussels sprouts and sweet potatoes.

Prior to cooking, the chicken is marinated in a mouthwatering rub consisting of garlic, olive oil, fresh rosemary, lemon juice and pure maple syrup.

It’s then layered on top of the vegetables and added to the slow cooker to cook on low heat for several hours. A final few minutes on the grill helps the skin get crispy.

If you don’t have a slow cooker, you can use your oven instead by roasting the chicken for three hours at 140°C.
