Baked Ham with Maple-Mustard Glaze

Ingredients

for the Baked Ham

  • 1 pre-cooked, bone-in half ham (about 3.5kg)
  • 15 whole cloves
  • 85 g dark brown sugar
  • 85 g pure maple syrup (preferably golden colour for its delicate flavour)
  • 2 tbsp Dijon mustard

Method

Prepare the ham

  1. Preheat oven to 250°C.
  2. Cut off any tough, leather-like skin from the ham.
  3. Score the fat in a crosshatch pattern.
  4. Stud the ham all over with whole cloves. Place in a large roasting pan and loosely tent with foil.

Bake and glaze

  1. Put the ham in the oven. After 15 minutes, reduce temperature to 160°C.
  2. Meanwhile, make the glaze by whisking together dark brown sugar, maple syrup, and Dijon mustard until smooth.
  3. Remove ham from oven and brush generously with the glaze.
  4. Return to oven and continue cooking for 20 minutes, basting periodically until glaze is golden brown and sticky.
