Baked ham with maple-mustard glaze

Christmas / Mains / Pork

8 portions

  • 1 pre-cooked, bone-in half ham (about 3.5kg)
  • 15 whole cloves
  • 85g dark brown sugar
  • 85g pure maple syrup (preferably golden colour for its delicate flavour)
  • 2 tablespoons Dijon mustard

  1. Preheat oven to 250°c. Cut off the tough, leather like skin from ham if it has it and score the fat in a crosshatch pattern
  2. Stud ham all over with cloves, put in a large roasting pan, and loosely tent with foil
  3. Place the ham in the oven. After 15 mins, turn the temperature down to 160°c
  4. While the ham is baking, make the glaze: in a medium bowl, combine brown sugar, maple syrup, and mustard. Whisk until smooth
  5. Remove the ham from the oven and brush it generously with the glaze, then put it back in the oven to cook for a further 20 mins. Continue basting periodically until the glaze is golden brown

A delicious golden brown baked ham marinated in delicate-tasting golden maple syrup. The perfect Canadian Christmas dinner!

More about Maple

The colour and flavour of maple syrup changes in subtle ways during the seasonal harvest.

At the start of the sugaring season, the syrup is generally clear, with a light, sweet taste. It becomes darker with a caramelised flavour as the season progresses throughout the spring.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.

100% pure maple butter doesn't contain any butter, or dairy products.

Like all 100% pure maple products, maple butter comes from the sap of the maple tree – that’s all.
