Jemma Loi’s Maple Shortbread Christmas Tree

Ingredients
- 200 g salted butter
- 80 ml pure Canadian maple syrup
- 60 g golden caster sugar
- 300 g plain flour
- 2 tsp cornflour
Method
- Beat butter, maple syrup and sugar until creamy. Mix in flour and cornflour to form a soft dough (chill 10 minutes if sticky).
- Roll out to 7–8mm thick and cut graduating star shapes.
- Chill the stars for 10 minutes, then bake at 150°C (fan) for 20–25 minutes until pale golden and let them cool.
- Stack the stars largest to smallest, rotating each layer for a tree shape.
- Secure with a little maple icing if needed.
Maple Icing
- Mix icing sugar with a spoonful of maple syrup until thick and snowy.
- Drizzle the edges and finish with sprinkles or edible glitter.
- Brush a little maple syrup on the stars for shine and dust with icing sugar “snow”.
