Maple and Baileys Panettone and Butter Pudding

Maple and Baileys panettone and butter pudding 3 (1) (1)

Ingredients

  • 150ml double cream
  • 150ml milk
  • 50g chocolate chips
  • 50g maple sugar
  • 50g sultanas
  • 100g melted unsalted butter
  • 2 tbsp maple syrup (preferably golden colour for its delicate flavour)
  • 500g sliced panettone
  • 2 eggs
  • 80ml Baileys or equivalent Irish cream liquor

Method

  1. Heat the oven to 180C.
  2. Grease an oven proof dish with butter, then use the rest to spread on the sliced panettone
  3. Cut the Panettone into triangles and arrange so that they overlap in the dish. Sprinkle the sultanas and chocolate chips between the layers.
  4. Mix the unsalted butter with maple syrup then spread onto the slices with a pastry brush.
  5. Beat the eggs and mix with the milk, cream, vanilla extract, Baileys and maple sugar, then pour over the panettone slices.
  6. Lightly press down so the slices absorb the creamy mixture.
  7. Bake for 30 minutes or until the top is golden and the pudding is set.
  8. Serve warm with ice cream or custard.
