Ingredients
Maple and soy sauce ice cream
- 250ml whole milk
- 200ml amber Maple syrup
- 1 tbsp maple sugar
- 2 tsp vanilla extract
- 500ml double cream
- 7 soy sauce
- 6 egg yolks
Maple salted caramel
- 200ml maple syrup (amber)
- 100ml double cream
- 25g soft unsalted butter
- 1g sea salt
Method
Maple and soy sauce ice cream
- Pour the milk, double cream, vanilla extract, maple sugar and half of the maple syrup in a pan.
- Mix in a bowl the egg yolk with the remaining maple syrup.
- Put the pan on a medium heat then add the egg yolk mix.
- Keep stirring until the temperature reached 85°C.
- Transfer the ice cream mixture into a bowl then cool it down until cold.
- Churn the maple ice cream following your churner instructions then keep in the freezer
Maple salted caramel
- In a large pan, pour the Maple syrup and double cream.
- Boil both ingredients on medium heat for 1 minute. Stir continuously.
- Add the soft unsalted butter and sea salt at the end.
- Stir and pour into a jar.
- Keep refrigerated.
