Maple Fish Parcels

Ingredients
- 2 salmon fillets
- 2 small red and green chillies (halved)
- 125g tomatoes on the vine
- Half head of fennel thinly sliced (tops optional)
- 4 lemon slices
- Lemon grass (crushed)
- 1tbsp pure Canadian maple syrup (preferably golden colour for its delicate flavour)
- 100ml vegetable stock
Method
- Pre-heat the oven at 180C
- Prepare the vegetable stock
- On a baking tray, create a bag with a layer of tin foil and a layer of grease-proof paper
- Add in all of the ingredients and drizzle with maple syrup
- Enclose everything in the bag by folding in the edges
- Cook for 12 – 15 mins until the fish is cooked through and serve
