Maple Frozen Yoghurt Lollies

Ingredients

For the maple frozen yoghurt lollies:

  • 300g fresh berries (we used a mix of raspberry, blackberry, blueberry and strawberry)
  • 4 tbsp pure maple syrup (preferably amber syrup for its rich taste)
  • ½ lemon, juiced
  • 1kg full fat yoghurt
  • 150g maple sugar
  • 1 tsp vanilla extract
  • 3 tbsp granola

Equipment:

  • Ice cream maker
  • Ice lolly moulds

Method

  1. Add the berries, lemon juice and maple syrup to a saucepan
  2. On a low heat, cook down for 15 minutes, stirring every few minutes to prevent any burning
  3. Place in the fridge for few minutes to cool down
  4. Mix the yoghurt, maple sugar and vanilla extract together in a bowl before churning in your ice cream maker
  5. Once complete, add layers of yogurt, berries and granola to ice lolly moulds and place in the freezer until set
