Ingredients

For the mojito and maple ice lollies:

  • 125ml pure maple syrup (preferable golden colour for its delicate flavour)
  • 450ml water
  • 14 fresh mint leaves
  • 2 lime zests and juice
  • 70ml white rum

Equipment:

  • Ice lolly moulds

Method

  1. In a small pan, heat the maple syrup, water, lime zest and half of the mint leaves
  2. Leave to cool and then strain into a jug, discarding the mint and lime zest
  3. Add the lime juice and rum
  4. Divide the mixture into the ice lolly moulds
  5. Add in the reserved mint leaves
  6. Cover with mould lid and insert sticks
  7. Freeze until solid
