Ingredients
Pineapple Salsa
- 300g fresh pineapple, finely diced
- ½ green chilli, finely diced
- 1 small red onion, finely diced
- 1 handful fresh coriander, chopped
- 1 tbsp maple syrup
- Juice of 1 lime
- 1 tbsp olive oil
- Salt to taste
- 4 skinless salmon fillets, cut into bite sized pieces
- 1 tbsp oil
- 1 heaped tbsp Cajun seasoning
- 1 tbsp maple syrup
- Juice and zest of 1 lime
- 20g melted butter
- Fresh coriander to garnish
Method
- Combine all of the salsa ingredients in a bowl and stir well, leaving to stand while you cook the salmon.
- Place the salmon pieces into a bowl then add the Cajun seasoning and oil, mixing to make sure the salmon is coated all over.
- Cook on top of your crisp plate within your air fryer for 6-8 minutes, turning halfway through.
- Transfer the cooked salmon into a small bowl then drizzle with pure Canadian maple syrup, lime juice and butter before serving with the salsa and a sprinkling of fresh coriander.
