Maple Festive Granola

Ingredients
For the granola
- 170 ml pure Canadian maple syrup (preferably dark syrup for its robust taste)
- 60 ml apple juice
- 1 tbsp rapeseed oil
- 360 g rolled oats
- 64 g nuts (pecans, walnuts, hazelnuts, almonds, etc.)
- 1 tsp cinnamon
- 64 g dried fruit (apples, apricots, dates, raisins, cranberries, cherries, etc.)
Method
granola
- Preheat oven to 190ºC.
- Line two rimmed baking sheets with parchment paper or foil.
- In a cup, combine half of the maple syrup, apple juice, and rapeseed oil.
- In a large bowl, mix rolled oats, nuts, and cinnamon.
- Add the maple syrup mixture to the oat mixture and stir well to coat all ingredients evenly.
- Divide the mix equally between the two baking sheets and spread out evenly.
- Bake for 15 minutes, stirring every 5 minutes, until granola is golden and fragrant. Remove from oven and transfer granola back into the large bowl.
- Add the remaining maple syrup and dried fruit to the granola and mix thoroughly.
- Allow granola to cool completely; it will crisp up as it cools.
- Store in an airtight container.
Maple syrup and colourful dried fruit add lifting sweetness to this granola, which is both low in fat and high in carbohydrates.
