Roast Chicken and Maple Caesar Salad

Ingredients

For the Caesar dressing:

  • 60g mayonnaise
  • 60ml buttermilk
  • 60ml pure maple syrup (preferably amber syrup for its rich taste)
  • 3 tbsp Parmesan cheese, freshly grated
  • 1 garlic clove, grated
  • ½ tsp ground cayenne pepper 
  • Squeeze of fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Salt and black pepper, to taste

For the salad:

  • 1 whole roast chicken
  • 2 Romaine lettuces
  • 1 cup croutons
  • ¼ cup Parmesan cheese, freshly grated

Method

  1. Add all the dressing ingredients to a bowl and whisk until combined.
  2. Use your hands to tear the roast chicken from the bones and shred. 
  3. Place the roast chicken slices, lettuce, croutons, half the parmesan and dressing into a large bowl and toss to combine.
  4. Top with the remaining parmesan and serve.
