Vibrant recipes to light up your Spring Bank Holiday



The third Bank Holiday of the month is right around the corner, and the weather promises to be the best yet! Sunshine and warmth are forecast, providing the perfect opportunity for dining alfresco. 

To give you some cooking inspiration for the long weekend, we’ve gathered a number of eye-catching recipes that reflect the vibrant colours of spring. 

Each recipe is enriched with pure Canadian maple syrup, adding a splash of natural sweetness to your Spring Bank Holiday celebrations!  

Five dazzling spring recipes

Cauliflower, chickpea and maple tortillas

Looking for a quick dish that can be enjoyed as part of a picnic? These colourful chickpea and cauliflower tortillas can be prepared in around half an hour and then wrapped up to take on your travels. 

While the chickpea and cauliflower florets are baking in the oven, prepare the pink-pickled red onion and then spread the mashed avocado over the tortillas. Complete the composition by layering the rest of the ingredients and then – if you can handle a bit of spice – drizzle over some hot sauce!

Herb and maple-cured salmon 

Start your Bank Holiday weekend with a sophisticated brunch, courtesy of this beautiful cured salmon. Using a combination of salt, dill, lemon zest, maple sugar and pure maple syrup, the salmon takes on a wonderful flavour that is at once sweet, salty and zesty. 

After being left to cure overnight, the salmon is served on your choice of sourdough or rye bread, spread with a lemon-dill mayonnaise. For the finishing touches, garnish with fresh lemon and sliced radish.

BBQ jackfruit pizza

Another vegan-friendly dish that’s made for spring is this vibrant jackfruit pizza. The recipe involves making your own dough, and then topping the flatbread with a dazzling array of fresh fruit and vegetables. 

The jackfruit, which is cooked in a barbecue and maple syrup sauce until tender, serves as an excellent alternative to popular, meat-based pizza toppings like pepperoni. It’s paired with onions, chillies and blanched kale to form a truly stunning dish. 

Chicken and barley salad

This list wouldn’t be complete without a colourful spring salad – and it doesn’t get much better than this chicken and barley salad. Double dredged for extra crispiness, the chicken is first coated in a subtly spiced flour mix and then covered in breadcrumbs before being baked in the oven. 

The salad ingredients consist of cooked barley, cherry tomatoes, pomegranate seeds and a bag of mixed leaves. Bringing the salad and breaded chicken together is a wonderful vinaigrette, naturally sweetened with maple vinegar and pure maple syrup.

Vegan maple spring rolls

Rounding out the list are these stunning vegan spring rolls, packed with fresh vegetables and seasoned tofu. The spring rolls are encased in translucent rice paper sheets, which really show off the colours and textures of the contents.  

The recipe also features a simple but delicious peanut butter dipping sauce. Sweetened with maple vinegar, coconut milk and pure maple syrup, the sauce serves as the perfect complement to the mildly spiced spring rolls.
