Pumpkin, chestnut and maple soup

With the weather getting cooler, there’s nothing like a hearty pumpkin and chestnut soup to keep you feeling warm and well-nourished.

The sweet and earthy flavour of the pumpkin blends seamlessly with maple’s more pronounced sweetness, while the chestnuts add a nutty complexion to the dish.

Chopped chunks of pumpkin are baked in the oven until soft before being simmered in vegetable stock alongside the chestnuts.

Cream and maple syrup are then added to the pan, helping to thicken the mixture.

Finally, the soup is pulsed in a blender and then served with toasted hazelnuts, chopped chives and buttery bread.
