Maple-Glazed Chicken Wings with BBQ Sauce

Ingredients

For the chicken wings

  • 2.5 kg chicken wings
  • 2 tbsp olive oil
  • 4 tbsp pure maple syrup
  • 2 tbsp maple vinegar
  • 3 tbsp English mustard
  • 1 tsp paprika
  • 3 tbsp worcestershire sauce
  • 2 tsp celery salt
  • 3 tbsp soy sauce
  • 3 cloves of garlic
  • pinch red pepper flakes
  • 4 tsp hot sauce
  • ¼ tsp ground cumin

For the BBQ sauce

  • 50 ml Coca-Cola
  • 500 ml tomato ketchup
  • 120 ml maple vinegar
  • 4 tbsp pure maple syrup
  • 2 tbsp hot sauce
  • 2 tsp coffee granules
  • salt and pepper

Method

Chicken wings

  1. Place chicken wings in a large bowl. Mix together all remaining ingredients for the wings and pour over the chicken. Toss until well coated.
  2. Marinate overnight or for at least 2 hours.
  3. Preheat oven to 200ºC (180ºC fan).
  4. Cook the wings for 40–45 minutes until crispy, brushing regularly with additional marinade.
  5. Serve warm.

BBQ sauce

  1. In a saucepan, stir together Coca-Cola, maple vinegar, hot sauce, maple syrup, and coffee granules.
  2. Season with salt and pepper.
  3. Place on low heat and cook for 30 minutes, stirring occasionally.
  4. Sauce can be stored up to 3 weeks in a sealed container in the fridge.
