Ingredients

FOR THE BACON WRAPPED PORK

  • 1 pork fillet
  • 3 sausages
  • 150g grated cheddar cheese
  • 1 pack streaky bacon

FOR THE BBQ GLAZE SAUCE

  • 250ml ketchup
  • 60ml apple cider vinegar
  • 20ml pure Canadian maple syrup (preferably amber syrup for its rich taste)
  • 2 tsp Worcestershire sauce
  • 2 tsp mustard
  • 1-2 tsp hot sauce
  • 1 tsp salt
  • 1 tsp pepper

FOR THE MAPLE BBQ BEANS

  • 1 onion, diced
  • 2 tbsp rapeseed oil
  • 2 garlic cloves, crushed
  • 1 tin chopped tomatoes
  • 2 tins of beans, drained (cannellini or haricot beans)
  • 200ml maple bbq glaze sauce
  • 50ml pure Canadian syrup (preferably amber syrup for its rich taste)
  • 2 tsp dried thyme
  • 2 tsp hot sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp pepper

Method

TO MAKE THE BBQ GLAZE SAUCE

  1. Mix all of the bbq glaze sauce ingredients together until combined. Set a small bowl aside for glazing the pork. The rest will keep in the fridge for 4-5 days.

TO MAKE THE BACON WRAPPED PORK

  1. Set up your BBQ for 2 zone cooking. Place hot coals on one side and have a cool zone on the other. Use the vents to dial in your temperature to around 220C.
  2. Add a chunk of seasoned wood to the coals for the smoke. Cherry, apple, oak or maple will work great.
  3. Next, you want to butterfly the pork fillet. Cut along the length of the fillet, being careful not to cut all the way through. Lay the fillet out flat.
  4. Slice along the side of the sausages and remove the meat from the skin. Spread this meat over the pork fillet.
  5. Sprinkle the cheese all over the sausage meat.
  6. Lay out a packet of streaky bacon, the length of the pork fillet. You want a slight overlap between each piece of bacon.
  7. Lay the pork fillet on top of the bacon then wrap the fillet in the bacon, making sure there aren’t any gaps.
  8. Add the pork to the indirect side of the BBQ and cook with the lid down for 30 mins. After 30 mins, start brushing on the maple BBQ sauce glaze.
  9. Continue to cook with the lid down until the internal temperature reaches 70C then remove, rest and serve with maple BBQ beans!

TO MAKE THE MAPLE BBQ BEANS

  1. Gently fry the onion in the oil until soft.
  2. Add the garlic and cook for another minute.
  3. Add the remaining ingredients and simmer for 45 mins, until thickened to your desired consistency.
  4. Taste for seasoning and adjust to preference.

More about Maple

The colour and flavour of maple syrup changes in subtle ways during the seasonal harvest.

At the start of the sugaring season, the syrup is generally clear, with a light, sweet taste. It becomes darker with a caramelised flavour as the season progresses throughout the spring.

An unopened can of maple syrup keeps for many years.

Once the can is opened, syrup should be kept in an airtight container in a cool place.

100% pure maple butter doesn't contain any butter, or dairy products.

Like all 100% pure maple products, maple butter comes from the sap of the maple tree – that’s all.
