Whole Maple Roasted Cauliflower

Ingredients
For the roasted cauliflower
- 1 large cauliflower
- 1 lemon, zest and juice
- 1 tbsp smoked paprika
- 2 tbsp pure maple syrup
- bunch fresh thyme, divided
- 4 tbsp sherry vinegar
- 4 cloves garlic
- 250 ml olive oil
- kitchen foil
Method
paste
- Peel garlic cloves and blend with smoked paprika, half the fresh thyme, olive oil, pure maple syrup, sherry vinegar, lemon zest and juice, salt, and pepper to create a paste.
Roasting cauliflower
- Preheat oven to 180ºC/gas mark 4.
- Trim cauliflower, discarding stalk.
- Rub the paprika paste over the cauliflower evenly.
- Place cauliflower in the oven and roast for 50 minutes to 1 hour until golden brown.
- Cover with foil and roast for a further 40 minutes until tender.
To serve
- Remove from oven, drizzle with olive oil, and finish with remaining fresh thyme.
