Cream cheese fritters and maple summer cherries

Ingredients

For the fritters

  • 200g cream cheese
  • 250g cottage cheese, well drained
  • 2 large eggs
  • 1 tsp natural vanilla extract
  • 40g maple sugar
  • 40g chopped raisins
  • Lemon zest
  • 75g plain flour
  • 4 tbsp unsalted butter
  • 2 tbsp vegetable oil

For the cherries and maple syrup topping

  • 175ml pure maple syrup
  • 200g fresh cherries
  • Juice of 1 lemon

Method

  1. Place cream cheese, cottage cheese, eggs, vanilla extract and sugar in a bowl
  2. Beat until smooth, then stir in the raisins and lemon zest
  3. Sieve in the flour and combine
  4. Cover and refrigerate for four hours, or overnight
  5. Roll into balls with excess flour and flatten into discs
  6. Place onto a baking tray with greaseproof paper
  7. Melt butter and oil in a frying pan and cook fritters for two minutes on each side until golden brown. Keep warm in a low oven.
  8. Heat maple syrup, lemon juice, cherries and 1 tbsp of water in a pan until the cherries become soft
  9. Serve the fritters warm with cherries
