Maple glazed chicken wings with BBQ sauce

A BBQ bonanza for a weekday treat – form an orderly queue, please! The longer you leave the chicken wings to marinade, the better the flavour.

Chicken wings

Place chicken wings into a large bowl. Mix all other ingredients together and pour over chicken and toss until well coated.

Leave to marinade overnight, or for at least 2 hours.

Preheat oven to 200ºC/180ºC fan.

Cook for 40-45 minutes until crispy, regularly brushing with additional sauce.

Serve warm.

BBQ sauce

In a saucepan, stir together the Coca-Cola, ketchup, maple vinegar, hot sauce, maple syrup and coffee.

Season liberally with salt and pepper, place on a low heat and cook for 30 minutes.

The sauce will keep for up to 3 weeks in a tightly sealed container in the fridge.

Chef’s tip

As an alternative to BBQ sauce, which is often high calorie, try seasoning your chicken in a fresh marinade of olive oil, lemon juice, herbs and black pepper.

  • 2.5kg chicken wings
  • 2 tbsp olive oil
  • 4 tbsp pure maple syrup
  • 2 tbsp maple vinegar
  • 3 tbsp English mustard
  • 1 tsp paprika
  • 3 tbsp Worcestershire sauce
  • 2 tsp celery salt
  • 3 tbsp soy sauce
  • 3 cloves of garlic
  • Pinch red pepper flakes
  • 4 tsp hot sauce
  • 1⁄4 tsp ground cumin
  • BBQ sauce

  • 50ml Coca-Cola
  • 500ml tomato ketchup
  • 120ml maple vinegar
  • 4 tbsp pure maple syrup
  • 2 tbsp hot sauce
  • 2 tsp coffee granules
